Healthy Muffin Recipe

Muffins will always be one of our favorite desserts no matter how old we get!
Today I present you with a very easy, yet very healthy muffin recipe.
Your children will LOVE it, and they can even take it over to school. With only 1 cup of milk, this muffin is a whole meal rich in all types of vitamins and minerals your children need for breakfast.

Ingredients:
In a bowl put:

250 g whole grain flour (higher in fibers, proteins, iron, vitamins and minerals)

3 Tsp baking powder

1 Tsp salt

½ Tsp cinnamon
-
70 g crushed nuts like almonds, walnuts, pistachios, and others
In a mixer put:
- 1 medium egg
- 2 bananas (ripe is sweeter)
- 200 g milk of any type
- 100 g olive oil (or any oil)
- 100 g date syrup (optional) (or you can use maple syrup/ apple sauce/ honey for children over 1 year old)
- 1 Tsp vanilla extract
Instructions:

Mix the second group or whisk together

Add them over the bowl and mix (don’t over mix)

Fill up the muffin tray equally

Bake in the pre-heated middle row at 190 degrees or at 170 degrees if you have a fan oven

Keep for 15-25 minutes, until a toothpick comes out clean
And that’s it!
You can cover and refrigerate the leftovers for up to 3 days.
